"Where do you and your team get ideas to keep your menus fresh?” The answer is simple: take a round trip drive through the Eastern Shore of Maryland. In just one hour I pass rivers, creeks and bays teeming with blue crabs, jumping rockfish and beds of different types of oysters. I pass corn fields and hidden tracks leading to heirloom tomato growers, specialty lettuce growers and all sorts of small, startup organic farms. More evident, I pass over one hundred roadside stands with all sorts of melons, ripe berries, peaches, yellow and white (my favorite!), corn, home-made jams, jellies, relishes, the list is endless. Yes, I do get inspired by visiting a restaurant with wonderful food but above all my true inspiration is the wonderful, natural bounty from this beautiful Eastern Shore.
